  • 2 medium zucchinis, sliced into 1/2
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced zucchini, olive oil, garlic powder, Italian seasoning, salt, and black pepper. Toss until the zucchini is evenly coated.
  3. Spread the zucchini slices in a single layer on a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for 15 minutes.
  5. Remove the baking sheet from the oven and sprinkle the mozzarella and Parmesan cheese evenly over the zucchini.
  6. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
