Ingredients
- 2 medium zucchinis, sliced into 1/2
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the sliced zucchini, olive oil, garlic powder, Italian seasoning, salt, and black pepper. Toss until the zucchini is evenly coated.
- Spread the zucchini slices in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 15 minutes.
- Remove the baking sheet from the oven and sprinkle the mozzarella and Parmesan cheese evenly over the zucchini.
- Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the zucchini mixture before baking.
