Description

This Jalapeno Peach Chicken is a vibrant harmony of sweet, spicy, and savory flavors. Juicy chicken thighs seared to perfection, glazed with peach preserves, and garnished with fresh peaches and spicy jalapenos—an unforgettable skillet meal!


Ingredients

  1. Peach Glaze: In a bowl, whisk peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, garlic, salt, pepper, and red pepper flakes. Set aside.

  2. Season Chicken: Pat chicken thighs dry and season evenly with salt, black pepper, and chili powder.

  3. Cook Chicken: Heat olive oil in a skillet over medium heat. Cook chicken thighs 5 minutes per side, or until internal temperature reaches 165°F. Remove and cover loosely to keep warm.

  4. Cook Peaches & Jalapenos: Using the same skillet, sauté jalapeno slices for 3 minutes. Add peach slices, cooking another 3 minutes until tender.

  5. Combine & Glaze: Add the peach glaze to the skillet, coating peaches and jalapenos. Return chicken to skillet, spooning glaze over each piece. Cook for an additional 1–2 minutes until warmed through.

  6. Serve: Serve immediately, topped generously with glaze, peaches, and jalapenos.


Instructions

  1. Preheat the Oven
    Set your oven to broil (grill) on high. Position the oven rack in the middle of the oven.

  2. Make the Garlic Butter
    In a small saucepan or microwave-safe bowl, melt the butter with the crushed garlic and parsley until aromatic.

  3. Prepare the Mushrooms
    Brush the bottoms of the mushroom caps with garlic butter and place them buttered side down on a baking tray. Flip them and brush the inner sides with the remaining garlic butter.

  4. Stuff the Mushrooms
    Fill each cap with slices of mozzarella and tomatoes.

  5. Broil the Mushrooms
    Place under the broiler for about 8 minutes, or until the cheese is melted, bubbly, and golden on top.

  6. Make the Balsamic Glaze (Optional)
    In a small saucepan, bring balsamic vinegar and sugar (if using) to a boil. Reduce to a simmer and cook until thickened, about 5–8 minutes with sugar or 12–15 minutes without.

  7. Serve
    Remove mushrooms from the oven. Sprinkle with shredded basil and drizzle with balsamic glaze. Season with a pinch of salt if desired.
