Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup fresh pineapple, diced
- 1/4 cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Cooked rice or quinoa (for serving)
Instructions
- In a medium bowl, combine the sweet chili sauce, soy sauce, lime juice, minced garlic, and red pepper flakes (if using). Mix well and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and season with salt and pepper. Cook for 2-3 minutes until the shrimp start to turn pink.
- Add the diced pineapple to the skillet and cook for another 2 minutes, stirring occasionally.
- Pour the sweet chili sauce mixture over the shrimp and pineapple. Stir to coat everything evenly and cook for an additional 2-3 minutes until the shrimp are fully cooked and the sauce is heated through.
- Remove from heat and garnish with sliced green onions. Serve over cooked rice or quinoa.
Notes
- For a spicier kick, add more red pepper flakes or a dash of sriracha to the sauce.
- You can substitute the pineapple with mango or bell peppers for a different flavor profile.
