Ingredients

  • 1 sheet (24cm/10-inch square) puff pastry, thawed
  • 1/3 cup sugar
  • 1 teaspoon cinnamon

Instructions

  1. Prepare the Cinnamon-Sugar Mixture:
    • In a small mixing bowl, combine the sugar and cinnamon until evenly blended.
  2. Sprinkle and Roll the Pastry:
    • Lay the thawed puff pastry on a flat surface.
    • Sprinkle 2 tablespoons of the cinnamon-sugar mixture over the surface.
    • Gently press the sugar into the pastry using a rolling pin.
  3. Flip and Repeat:
    • Flip the pastry over and repeat the process with another 2 tablespoons of the cinnamon-sugar mixture.
  4. Fold the Pastry:
    • Fold the long edges of the pastry halfway to the center and lightly roll to flatten.
    • Fold the edges again so they meet in the middle.
  5. Sprinkle and Chill:
    • Sprinkle half of the remaining cinnamon-sugar mixture over the folded pastry and roll lightly.
    • Fold the pastry in half to create six layers, then chill in the refrigerator for 15 minutes.
  6. Preheat and Cut:
    • Preheat your oven to 400°F (200°C).
    • Remove the pastry from the fridge and cut it into 1cm strips.
  7. Coat with Sugar:
    • Dip the cut edges of each strip into the remaining cinnamon-sugar mixture for extra sweetness.
  8. Bake to Perfection:
    • Arrange the strips on a parchment-lined baking tray, leaving 2 inches of space between them.
    • Bake for 14 minutes, or until the sugar begins to caramelize.
    • Carefully flip the strips and bake for another 4 minutes, until golden and crispy.
  9. Cool and Serve:
    • Transfer the cookies to a cooling rack lined with parchment paper. Let them cool completely before serving.
