Ingredients
- 2 large sweet onions, sliced into rings
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced onions, olive oil, salt, black pepper, garlic powder, and dried thyme. Toss until the onions are well coated.
- Spread the onion mixture evenly in a greased 9×13-inch baking dish.
- Sprinkle the mozzarella cheese over the onions, followed by the Parmesan cheese.
- In a small bowl, mix the breadcrumbs with a tablespoon of olive oil until evenly coated. Sprinkle the breadcrumb mixture over the cheese layer.
- Bake in the preheated oven for 30-35 minutes, or until the onions are tender and the top is golden brown.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.

- For a spicier kick, add a pinch of red pepper flakes to the onion mixture.
