Description

A delicious and creamy Sweet Potato Cheesecake that combines the flavors of sweet potatoes with a rich cream cheese filling, perfect for any occasion.


Ingredients

  • 2 cups sweet potato puree (about 2 medium sweet potatoes, cooked and mashed)
  • 1 ½ cups cream cheese, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar (for crust)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  4. Add the granulated sugar and brown sugar to the cream cheese and mix until well combined.
  5. Add the sweet potato puree, eggs, vanilla extract, cinnamon, nutmeg, and salt. Beat until the mixture is smooth and well blended.
  6. Pour the sweet potato filling over the cooled crust in the springform pan.
  7. Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly.
  8. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  9. Remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
