A delicious and creamy Sweet Potato Cheesecake that combines the flavors of sweet potatoes with a rich cream cheese filling, perfect for any occasion.
Ingredients
- 2 cups sweet potato puree (about 2 medium sweet potatoes, cooked and mashed)
- 1 ½ cups cream cheese, softened
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 1 cup graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar (for crust)
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Add the granulated sugar and brown sugar to the cream cheese and mix until well combined.
- Add the sweet potato puree, eggs, vanilla extract, cinnamon, nutmeg, and salt. Beat until the mixture is smooth and well blended.
- Pour the sweet potato filling over the cooled crust in the springform pan.
- Bake in the preheated oven for 50-60 minutes, or until the center is set and slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove from the oven and let it cool to room temperature. Refrigerate for at least 4 hours or overnight before serving.
Notes
- For a richer flavor, consider adding ½ cup of chopped pecans or walnuts to the crust mixture.
- You can also top the cheesecake with whipped cream and a sprinkle of cinnamon before serving for an extra touch.
