Description
A delicious twist on traditional lasagna using sweet potatoes instead of pasta, layered with ground turkey, ricotta, and mozzarella cheese.
Ingredients
- 2 large sweet potatoes, peeled and sliced into thin rounds (about 4 cups)
- 1 pound ground turkey or beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 cup marinara sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with cooking spray or olive oil.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground turkey or beef to the skillet. Season with salt, pepper, oregano, and basil. Cook until the meat is browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
- Spread a thin layer of marinara sauce on the bottom of the prepared baking dish.
- Layer half of the sweet potato slices over the sauce, followed by half of the meat mixture, half of the ricotta cheese, and half of the mozzarella cheese. Repeat the layers, finishing with the remaining sweet potato slices on top.
- Spread the remaining marinara sauce over the top layer of sweet potatoes and sprinkle with grated Parmesan cheese.
- Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the sweet potatoes are tender and the cheese is bubbly and golden.
- Allow the lasagna to cool for 10 minutes before slicing. Garnish with fresh basil if desired.
Notes
- For a vegetarian option, substitute the ground meat with sautéed mushrooms or lentils.
- Add layers of spinach or zucchini for extra vegetables and flavor.
