Description

A delicious Sweet and Savory Pork Stir-Fry that combines tender pork with fresh vegetables and a flavorful sauce.


Ingredients

  • 1 pound pork tenderloin, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil, divided
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup chicken broth
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • Cooked white rice or noodles, for serving

Instructions

  1. In a medium bowl, combine the sliced pork, soy sauce, and cornstarch. Mix well and let it marinate for 15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry for about 3-4 minutes until browned and cooked through. Remove the pork from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the red and green bell peppers, broccoli, and snap peas. Stir-fry for 4-5 minutes until the vegetables are tender-crisp.
  4. Add the garlic and ginger to the skillet and stir-fry for another minute until fragrant.
  5. Return the cooked pork to the skillet. In a small bowl, mix together the chicken broth, honey, rice vinegar, and sesame oil. Pour this sauce over the pork and vegetables, stirring to combine. Cook for an additional 2-3 minutes until heated through and the sauce thickens slightly.
  6. Serve the stir-fry over cooked white rice or noodles.
