Ingredients
For the Glaze:
- 1/2 cup peach preserves
- 1 tablespoon olive oil
- 1 teaspoon soy sauce
- 1 teaspoon apple cider vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon minced garlic
- 1/2 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon red pepper flakes
For the Chicken and Toppings:
- 2 lbs boneless, skinless chicken thighs
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder
- 2 tablespoons olive oil
- 1 jalapeño pepper, sliced
- 2 yellow peaches, pitted and sliced
Instructions
- Prepare the Glaze
- In a small bowl, whisk together peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Set aside.
- Season the Chicken
- Pat chicken thighs dry with paper towels.
- Season both sides with kosher salt, black pepper, and chili powder.
- Cook the Chicken
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the chicken thighs and cook for 5 minutes per side, or until the internal temperature reaches 165°F (74°C).
- Transfer the chicken to a plate and tent with foil to keep warm.
- Sauté the Jalapeños and Peaches
- In the same skillet, add sliced jalapeño peppers and cook for 3 minutes until softened and slightly charred.
- Add sliced peaches and cook for another 3 minutes until caramelized.
- Add the Glaze
- Pour the prepared glaze into the skillet with the jalapeños and peaches. Stir to coat evenly.
- Return the chicken thighs to the skillet, spooning the glaze over the top.
- Cook for 1-2 minutes until the chicken is heated through and well-coated.
- Serve
- Serve chicken thighs topped with caramelized peaches, jalapeños, and extra glaze. Pair with sides like steamed rice, roasted vegetables, or creamy mashed potatoes
