Ingredients

For the Glaze:

  • 1/2 cup peach preserves
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon red pepper flakes

For the Chicken and Toppings:

  • 2 lbs boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 2 tablespoons olive oil
  • 1 jalapeño pepper, sliced
  • 2 yellow peaches, pitted and sliced

Instructions

  • Prepare the Glaze
    • In a small bowl, whisk together peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Set aside.
  • Season the Chicken
    • Pat chicken thighs dry with paper towels.
    • Season both sides with kosher salt, black pepper, and chili powder.
  • Cook the Chicken
    • Heat 2 tablespoons of olive oil in a large skillet over medium heat.
    • Add the chicken thighs and cook for 5 minutes per side, or until the internal temperature reaches 165°F (74°C).
    • Transfer the chicken to a plate and tent with foil to keep warm.
  • Sauté the Jalapeños and Peaches
    • In the same skillet, add sliced jalapeño peppers and cook for 3 minutes until softened and slightly charred.
    • Add sliced peaches and cook for another 3 minutes until caramelized.
  • Add the Glaze
    • Pour the prepared glaze into the skillet with the jalapeños and peaches. Stir to coat evenly.
    • Return the chicken thighs to the skillet, spooning the glaze over the top.
    • Cook for 1-2 minutes until the chicken is heated through and well-coated.
  • Serve
    • Serve chicken thighs topped with caramelized peaches, jalapeños, and extra glaze. Pair with sides like steamed rice, roasted vegetables, or creamy mashed potatoes
