Description
A flavorful side dish that combines the crunch of cabbage and carrots with the tanginess of dill pickles, all brought together with a sweet and spicy dressing.
Ingredients
- 2 cups green cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- 1 cup carrots, grated
- 1 cup dill pickles, chopped
- 1/2 cup red onion, thinly sliced
- 1/2 cup mayonnaise
- 1/4 cup apple cider vinegar
- 1/4 cup sugar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon celery seed
- 1/4 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the green cabbage, red cabbage, carrots, dill pickles, and red onion. Toss to mix well.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, garlic powder, celery seed, cayenne pepper, salt, and pepper until smooth.
- Pour the dressing over the cabbage mixture and toss until all the vegetables are well coated.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. For best results, chill for 2-3 hours.
- Before serving, give the slaw a good stir and adjust seasoning if necessary.
Notes
- For a crunchier texture, add 1/2 cup of chopped bell peppers or sliced radishes.
- Substitute Greek yogurt for half of the mayonnaise for a lighter version.
