Description

A flavorful side dish that combines the crunch of cabbage and carrots with the tanginess of dill pickles, all brought together with a sweet and spicy dressing.


Ingredients

  • 2 cups green cabbage, finely shredded
  • 1 cup red cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup dill pickles, chopped
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1/4 cup sugar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon celery seed
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the green cabbage, red cabbage, carrots, dill pickles, and red onion. Toss to mix well.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, garlic powder, celery seed, cayenne pepper, salt, and pepper until smooth.
  3. Pour the dressing over the cabbage mixture and toss until all the vegetables are well coated.
  4. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. For best results, chill for 2-3 hours.
  5. Before serving, give the slaw a good stir and adjust seasoning if necessary.

Notes

  • For a crunchier texture, add 1/2 cup of chopped bell peppers or sliced radishes.
  • Substitute Greek yogurt for half of the mayonnaise for a lighter version.
