Description

A delicious and hearty casserole made with sausage, eggs, cream cheese, and hashbrowns, perfect for breakfast or brunch.

Ingredients

  • 1 pound breakfast sausage
  • 1 (30-ounce) bag frozen hashbrowns
  • 8 ounces cream cheese, softened
  • 6 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1/4 cup chopped green onions (for garnish, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart as it cooks. Drain excess grease and set aside.
  3. In a large mixing bowl, combine the softened cream cheese and milk. Whisk until smooth.
  4. Add the eggs, garlic powder, onion powder, salt, black pepper, and paprika (if using) to the cream cheese mixture. Whisk until well combined.
  5. In a greased 9×13-inch baking dish, spread the frozen hashbrowns evenly across the bottom.
  6. Layer the cooked sausage over the hashbrowns, followed by the egg and cream cheese mixture.
  7. Sprinkle the shredded cheddar cheese evenly on top.
  8. Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the top is golden brown.
  9. Let the casserole cool for about 10 minutes before slicing. Garnish with chopped green onions if desired.

Notes

  • For a spicier version, add diced jalapeños or use spicy sausage.
  • Substitute the cheddar cheese with your favorite cheese, such as mozzarella or pepper jack, for a different flavor profile.
