Ingredients
- 2 cups cooked chicken, shredded
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- 4 large lettuce leaves (such as romaine or butter lettuce)
- 1 cup shredded carrots
- 1 cup sliced cucumbers
- 1/2 cup chopped green onions
- 1/4 cup chopped cilantro (optional)
- Chopped peanuts for garnish (optional)
Instructions
- In a medium bowl, combine the peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic powder, and ground ginger. Mix well until smooth and creamy.
- In a large bowl, add the shredded chicken and pour the peanut sauce over it. Toss until the chicken is evenly coated.
- Lay out the lettuce leaves on a clean surface.
- Divide the chicken mixture among the lettuce leaves, placing it in the center of each leaf.
- Top the chicken with shredded carrots, sliced cucumbers, green onions, and cilantro if using.
- Carefully fold the sides of the lettuce leaves over the filling and roll them up tightly like a wrap.
- If desired, sprinkle chopped peanuts on top for added crunch. Serve immediately or refrigerate for up to 30 minutes before serving for a chilled option.
