Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger
  • 4 large lettuce leaves (such as romaine or butter lettuce)
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup chopped green onions
  • 1/4 cup chopped cilantro (optional)
  • Chopped peanuts for garnish (optional)

Instructions

  1. In a medium bowl, combine the peanut butter, soy sauce, honey, rice vinegar, sesame oil, garlic powder, and ground ginger. Mix well until smooth and creamy.
  2. In a large bowl, add the shredded chicken and pour the peanut sauce over it. Toss until the chicken is evenly coated.
  3. Lay out the lettuce leaves on a clean surface.
  4. Divide the chicken mixture among the lettuce leaves, placing it in the center of each leaf.
  5. Top the chicken with shredded carrots, sliced cucumbers, green onions, and cilantro if using.
  6. Carefully fold the sides of the lettuce leaves over the filling and roll them up tightly like a wrap.
