Ingredients
- 1 cup cottage cheese (full-fat or low-fat)
- ½ cup protein powder (vanilla recommended)
- 4 large eggs (room temperature)
- ⅔ cup unsweetened cocoa powder
- ¼ cup coconut oil (melted)
- ½ cup coconut flour
- ¾ cup sweetener (your preferred choice)
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- ¼ cup chocolate chips or chopped dark chocolate
Instructions
- Preheat & Prep: Preheat the oven to 350°F (180°C). Line a 9×9 inch square baking pan with parchment paper or grease it well.
- Blend Cottage Cheese: In a blender or food processor, blend the cottage cheese until smooth, scraping down the sides as needed.
- Mix the Wet Ingredients: Add eggs, melted coconut oil, and vanilla extract to the blended cottage cheese. Blend again until fully combined.
- Combine Dry & Wet Ingredients: Add protein powder, cocoa powder, coconut flour, sweetener, and baking powder to the mixture. Blend until you get a smooth, lump-free batter.
- Prepare to Bake: Pour the batter into the prepared baking pan and spread it evenly. Sprinkle chocolate chips or chopped dark chocolate over the top.
- Bake to Perfection: Bake for 20-22 minutes, until the top is set and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).
