Instructions

- Whisk & Blend: Add both sugars and vanilla extract to the browned butter. Whisk vigorously until combined (about 2 minutes). Incorporate egg yolks and egg, whisking until smooth.
- Mix Dry Ingredients: In a separate bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually mix dry ingredients into the butter-sugar mixture until halfway combined.
- Fold in Chips: Gently fold in butterscotch and chocolate chips until evenly distributed throughout the dough.
- Chill Dough: Cover the bowl and refrigerate dough for at least 1 hour. Chilling helps cookies develop flavor and prevents excessive spreading.
