Description

These Butterscotch Chocolate Chip Cookies are irresistibly chewy, buttery, and loaded with sweet butterscotch and semi-sweet chocolate chips. Browned butter adds a rich, nutty depth, and a pinch of flaky sea salt perfectly balances their sweetness. Bake a batch and watch them disappear!


Ingredients

  • 1 cup unsalted butter
  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 large egg yolks
  • 1 large egg
  • 2 ½ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup butterscotch chips
  • ½ cup semi-sweet chocolate chips
  • Flaky sea salt (optional, for sprinkling)

Instructions

  1. Brown the Butter: In a skillet over medium heat, melt butter while stirring continuously until golden brown with a nutty aroma. Transfer to a mixing bowl, ensuring you scrape in all the flavorful brown bits. Let cool for 5 minutes.
  2. Whisk & Blend: Add both sugars and vanilla extract to the browned butter. Whisk vigorously until combined (about 2 minutes). Incorporate egg yolks and egg, whisking until smooth.
  3. Mix Dry Ingredients: In a separate bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually mix dry ingredients into the butter-sugar mixture until halfway combined.
  4. Fold in Chips: Gently fold in butterscotch and chocolate chips until evenly distributed throughout the dough.
  5. Chill Dough: Cover the bowl and refrigerate dough for at least 1 hour. Chilling helps cookies develop flavor and prevents excessive spreading.
  6. Prep & Preheat: Line two baking sheets with parchment paper. Preheat oven to 325°F (160°C).
  7. Scoop & Space: Use a ¼-cup scoop for large cookies (space 3 inches apart) or a 2-tablespoon scoop for smaller cookies (space 2 inches apart).
  8. Bake: Bake large cookies for 10-13 minutes or smaller cookies for 9-11 minutes, until edges are golden and centers look slightly underdone.
  9. Cool & Enjoy: Allow cookies to cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely. Sprinkle with flaky sea salt if desired.
