Ingredients

  • ¾ cup cottage cheese (drained)
  • 2 eggs
  • ¾ teaspoon vanilla essence
  • ¼ cup granulated sugar
  • ½ teaspoon baking soda
  • ¾ teaspoon white vinegar
  • 2 cups plain flour
  • ¼ teaspoon salt
  • ¾ teaspoon baking powder
  • 2 tablespoons milk
  • 2 tablespoons sugar (for topping)

Instructions

  1. Preheat & Prepare: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a Silpat mat.
  2. Blend the Wet Ingredients: In a food processor, blend the cottage cheese, eggs, vanilla essence, and granulated sugar until smooth.
  3. Activate the Baking Soda: In a small bowl, mix baking soda and vinegar and allow it to foam up. Add this bubbly mixture to the food processor and blend well.
  4. Incorporate Dry Ingredients: Add the flour, salt, and baking powder to the food processor. Mix until a sticky dough forms.
  5. Shape the Rolls: Transfer the sticky dough onto a floured surface. Divide into 8 equal pieces and roll each into a ball. Arrange them evenly on the prepared baking sheet.
  6. Bake in Stages: Bake for 12 minutes. Remove from the oven, brush each roll with milk, and sprinkle sugar on top. Return to the oven and bake for another 5-10 minutes, or until golden brown.
  7. Cool & Store: Let the rolls cool slightly before serving. Store any leftovers in an airtight container.
