Ingredients
- ¾ cup cottage cheese (drained)
- 2 eggs
- ¾ teaspoon vanilla essence
- ¼ cup granulated sugar
- ½ teaspoon baking soda
- ¾ teaspoon white vinegar
- 2 cups plain flour
- ¼ teaspoon salt
- ¾ teaspoon baking powder
- 2 tablespoons milk
- 2 tablespoons sugar (for topping)
Instructions
- Preheat & Prepare: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a Silpat mat.
- Blend the Wet Ingredients: In a food processor, blend the cottage cheese, eggs, vanilla essence, and granulated sugar until smooth.
- Activate the Baking Soda: In a small bowl, mix baking soda and vinegar and allow it to foam up. Add this bubbly mixture to the food processor and blend well.
- Incorporate Dry Ingredients: Add the flour, salt, and baking powder to the food processor. Mix until a sticky dough forms.
- Shape the Rolls: Transfer the sticky dough onto a floured surface. Divide into 8 equal pieces and roll each into a ball. Arrange them evenly on the prepared baking sheet.
- Bake in Stages: Bake for 12 minutes. Remove from the oven, brush each roll with milk, and sprinkle sugar on top. Return to the oven and bake for another 5-10 minutes, or until golden brown.
- Cool & Store: Let the rolls cool slightly before serving. Store any leftovers in an airtight container.
