Ingredients

  • Dry Ingredients:
    • 3 cups all-purpose flour (or whole wheat flour)
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon salt

Wet Ingredients:

  • 1 cup full-fat cottage cheese
  • ½ cup butter, at room temperature
  • 1½ cups sugar
  • 1½ cups light brown sugar, packed
  • 3 eggs
  • 1 tablespoon vanilla extract

Mix-ins for a Hearty Bite:

  • 3 cups semi-sweet chocolate chips
  • 3 cups old-fashioned oats
  • 2 cups walnuts, chopped
  • 2 cups unsweetened coconut flakes

Instructions

  1. Preheat & Prep:
    • Preheat oven to 350°F.
    • Line baking sheets with parchment paper.
  2. Mix the Dry Ingredients:
    • In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. Blend the Base:
    • In a large bowl, beat cottage cheese and butter with an electric mixer until smooth and creamy.
    • Gradually add sugars, mixing until well combined.
  4. Add the Eggs & Flavor:
    • Beat in eggs one at a time, followed by vanilla extract.
  5. Combine & Fold:
    • Stir in the flour mixture until just incorporated.
    • Fold in chocolate chips, oats, walnuts, and coconut.
  6. Shape & Space:
    • Drop ¼-cup portions of dough onto the prepared baking sheets, spacing them 3 inches apart.
    • Gently flatten each cookie with the bottom of a glass.
  7. Bake & Cool:
    • Bake for 15–17 minutes, rotating the sheets halfway through, until the edges are golden brown.
    • Transfer to a rack to cool completely.

Notes

  • Cottage cheese adds moisture and richness without making the cookies dense.
  • For a crunchier texture, bake for an extra 1-2 minutes.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • Freeze unbaked cookie dough portions for up to 3 months—just bake straight from frozen, adding a couple of extra minutes.
