Description

Crispy, flaky puff pastry wraps around tender asparagus, rich Gruyère cheese, and salty prosciutto to create these Golden Puff Pastry Bundles. With a buttery crunch and a gooey, cheesy center, these elegant appetizers are perfect for brunch, holiday gatherings, or a sophisticated snack!

Ingredients

1 bunch asparagus (1216 oz, ends trimmed), 1 tbsp extra virgin olive oil, kosher salt (to taste), black pepper (to taste), 2 sheets frozen puff pastry (thawed), 8 oz Gruyère cheese (shredded), 12 slices prosciutto, 1 egg (beaten).

Instructions

  • Preheat & Prepare – Set the oven to 425°F and line a baking sheet with parchment paper.

  • Roll & Cut the Pastry – Lightly flour a surface and roll out each sheet of puff pastry into a large rectangle (about twice its original size). Trim edges and cut into 6 equal squares.

  • Season the Asparagus – Toss the trimmed asparagus spears with olive oil, salt, and pepper.

  • Assemble the Bundles

    • Lay a slice of prosciutto on each puff pastry square (fold in half if needed).
    • Add 3-4 asparagus spears on top, followed by 1-2 tablespoons of shredded Gruyère.
    • Bring two opposite corners of the pastry up and over the asparagus, pressing to seal.
  • Brush & Bake – Brush the pastry with beaten egg and sprinkle with a little salt and pepper if desired. Bake for 12-15 minutes, or until golden brown and puffed.

  • Serve & Enjoy – Best served fresh, but can be reheated at 350°F for about 10 minutes.

Notes

  • Swap Gruyère with Parmesan or Swiss for a different cheese flavor.
  • Use puff pastry triangles for a unique shape.

  • Can be assembled ahead of time and baked just before serving.
