Ingredients

  • 1 package chocolate cake mix (regular size)
  • Pencil, paper, scissors, and waxed paper
  • 1 cup light green candy coating disks
  • 24 chocolate wafers
  • 2 tablespoons corn syrup, warmed
  • Gold pearl dust
  • 2 packages (4.67 ounces each) mint Andes candies, chopped
  • 1/2 cup heavy whipping cream

Instructions

  1. Bake the Base:
    • Prepare and bake the chocolate cake batter according to the package directions for cupcakes.
    • Allow the cupcakes to cool completely before decorating.
  2. Create the Shamrock Toppers:
    • Draw a shamrock design on paper, cut it out, and place waxed paper over it.
    • Melt the green candy coating in a microwave-safe bowl, stirring until smooth.
    • Transfer the melted candy into a resealable plastic bag, snip a small hole in the corner, and pipe shamrock shapes onto the waxed paper.
    • Repeat for a total of 24 shamrocks.
    • Refrigerate until firm.
  3. Prepare the Gold Wafers:
    • Lightly brush chocolate wafers with warmed corn syrup.
    • Dust with gold pearl dust for a shimmering effect.
  4. Assemble the Shamrocks:
    • Gently lift the candy shamrocks from the waxed paper.
    • Lightly brush the bottoms with corn syrup and attach each to a gold-dusted wafer.
    • Set aside for later use.
  5. Make the Minty Glaze:
    • Place chopped Andes candies in a small bowl.
    • In a small saucepan, bring heavy whipping cream to a boil.
    • Pour the hot cream over the chopped Andes candies and whisk until smooth.
    • Let cool slightly, stirring occasionally, until it reaches a pourable consistency.
  6. Dip and Decorate:
    • Dip each cupcake into the melted mint mixture, allowing it to set.
    • Finally, press a shamrock-topped wafer onto each cupcake for a festive finishing touch.

Notes

  • If you don’t have gold pearl dust, edible glitter can add a magical touch.
  • Allow the minty glaze to set before serving for a clean, polished look.
  • Store cupcakes in an airtight container at room temperature for up to 3 days.
  • For extra minty flavor, add a drop of peppermint extract to the cake batter.
