Ingredients
For the Cake:
1 box vanilla cake mix (or white/yellow cake mix), 1 (3.4-ounce) box instant pistachio pudding mix, 3 large eggs, 1 cup oil, 1 cup cold milk, 6–8 drops green food coloring (optional).
For the Frosting:
1 (3.4-ounce) box instant pistachio pudding mix, ½ cup cold milk, 8-ounce tub frozen whipped topping (thawed), 5 drops green food coloring (optional).
Instructions
- Preheat & Prep: Preheat oven to 350°F. Grease a 9×13-inch baking dish with nonstick spray.
- Mix It Up: In a medium bowl, combine dry cake mix and pistachio pudding mix. Stir in eggs, oil, and milk until just combined.
- Go Green (Optional): Add 6–8 drops of green food coloring and stir until fully incorporated.
- Bake to Perfection: Pour batter into the prepared dish and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Cool It Down: Let the cake cool completely before frosting.
- Whip Up the Frosting: In a bowl, mix pistachio pudding mix with ½ cup milk until smooth. Fold in thawed whipped topping and add 5 drops of green food coloring (optional).
- Frost & Finish: Spread the frosting evenly over the cooled cake. Garnish with crushed pistachios or green sprinkles if desired.
- Chill & Serve: Refrigerate until ready to serve. Slice and enjoy!

- For a more intense pistachio flavor, add a handful of finely chopped pistachios to the batter.
