Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar, divided
  • 3 (8-ounce) packages cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup heavy cream
  • 1 cup pecans, chopped
  • 1 cup caramel sauce, plus extra for drizzling

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with cooking spray.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and ¼ cup of sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
  4. Gradually add the remaining ¾ cup of sugar and vanilla extract, mixing until well incorporated.
  5. Add the eggs, one at a time, mixing on low speed after each addition until just combined. Do not overmix.
  6. Stir in the sour cream and heavy cream until smooth. Fold in the chopped pecans gently.
  7. Pour the cheesecake batter over the prepared crust, smoothing the top with a spatula.
  8. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
  9. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  10. Before serving, drizzle with caramel sauce and garnish with additional chopped pecans if desired.
