Ingredients
- 1 pound ground beef
- 1 block (16 ounces) Velveeta cheese, cubed
- 1 package (8 ounces) cream cheese, softened
- 2 cups Fiesta Blend cheese (cheddar & Monterey Jack), shredded
- 1 can (10 ounces) Rotel diced tomatoes and green chilies, drained
- 2 tablespoons taco seasoning (homemade or store-bought)
- Tortilla chips or sliced veggies for dipping
Instructions
- Brown the Beef: Heat a large skillet over medium heat. Add ground beef and cook until fully browned, breaking it apart as it cooks. Drain excess grease, leaving a little for flavor.
- Melt the Cheese: Add Velveeta cubes, softened cream cheese, shredded Fiesta Blend cheese, and drained Rotel to the skillet. Sprinkle in the taco seasoning.
- Combine and Heat: Stir over medium heat until all cheeses are melted and the mixture is smooth and creamy.
- Adjust Seasoning: Taste and tweak seasoning if needed. For extra spice, add cayenne pepper or additional taco seasoning.
- Serve Hot: Transfer to a serving bowl or keep warm in a slow cooker on the “keep warm” setting. Serve with tortilla chips, fresh veggies, or crackers.
