Description

Indulge in a warm, cheesy, and flavor-packed taco dip that’s perfect for parties, game nights, or any gathering! Loaded with seasoned beef, creamy cheeses, and zesty Rotel, this dip is a guaranteed crowd-pleaser. Serve it hot with tortilla chips or fresh veggies for the ultimate snacking experience.

Ingredients

  • 1 pound ground beef
  • 1 block (16 ounces) Velveeta cheese, cubed
  • 1 package (8 ounces) cream cheese, softened
  • 2 cups Fiesta Blend cheese (cheddar & Monterey Jack), shredded
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, drained
  • 2 tablespoons taco seasoning (homemade or store-bought)
  • Tortilla chips or sliced veggies for dipping

Instructions

  1. Brown the Beef: Heat a large skillet over medium heat. Add ground beef and cook until fully browned, breaking it apart as it cooks. Drain excess grease, leaving a little for flavor.
  2. Melt the Cheese: Add Velveeta cubes, softened cream cheese, shredded Fiesta Blend cheese, and drained Rotel to the skillet. Sprinkle in the taco seasoning.
  3. Combine and Heat: Stir over medium heat until all cheeses are melted and the mixture is smooth and creamy.
  4. Adjust Seasoning: Taste and tweak seasoning if needed. For extra spice, add cayenne pepper or additional taco seasoning.
  5. Serve Hot: Transfer to a serving bowl or keep warm in a slow cooker on the “keep warm” setting. Serve with tortilla chips, fresh veggies, or crackers.
