Ingredients

  • 2 (15.25-ounce) cans or 3 cups whole kernel corn
  • 2 jalapenos, seeded and diced
  • 1 cup shredded Colby Jack cheese (or Pepper Jack for extra heat)
  • 2/3 cup sour cream
  • 1 (8-ounce) block cream cheese, cubed
  • 6 slices bacon, cooked and chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup queso fresco, crumbled
  • 1 lime (half juiced, half cut into wedges)
  • 2 teaspoons Tajín seasoning (optional)
  • Tortilla chips or Fritos for dipping

Instructions

1. Combine Ingredients
In a slow cooker, add corn, jalapenos, shredded cheese, sour cream, Tajín (if using), and cream cheese.

2. Slow Cook
Set the slow cooker to low and let it cook for 2 hours, stirring occasionally.

3. Add Bacon
Stir in the cooked bacon, saving a bit for garnish.

4. Final Touches
Remove from heat and top with cilantro, queso fresco, and a fresh squeeze of lime.

5. Serve & Enjoy
Serve warm with tortilla chips or Fritos for dipping.

Notes

  • Extra Creamy: Add the cream cheese 15 minutes before serving for a smoother melt.
  • Spice Level: Adjust the heat by using more or fewer jalapenos or switching to Pepper Jack cheese.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat before serving.
  • Make It a Meal: Serve over grilled chicken or mix into pasta for a creamy, flavorful twist.

This dip is rich, indulgent, and impossible to resist! Perfect for your next party or snack craving.
