These Mini Egg Rice Krispie Squares are the ultimate Easter treat—chewy, crispy, and packed with chocolatey goodness! With layers of gooey marshmallows, crunchy Rice Krispies, and colorful mini eggs, all topped with creamy white chocolate, they’re a festive, no-bake delight. Ingredients
120g unsalted butter
½ tsp salt
260g Rice Krispies
300g marshmallows
2 tsp vanilla extract
160g mini eggs (for mixing)
300g white chocolate
160g mini eggs (for decoration)
Instructions
- Prepare the Tin – Grease and line a 9×9-inch square tin with parchment paper.
- Melt the Marshmallow Mix – In a heatproof bowl, combine butter, vanilla, salt, and marshmallows. Melt over a bain-marie (double boiler), stirring constantly until smooth.
- Coat the Rice Krispies – Remove from heat and quickly mix in the Rice Krispies, ensuring they’re fully coated.
- Layer & Add Mini Eggs – Press half of the mixture into the prepared tin. Sprinkle 160g mini eggs evenly on top, gently pressing them into the mix.
- Complete the Base – Add the remaining Rice Krispie mixture over the mini eggs and flatten it evenly using a spatula. Let it set for 15 minutes.
- Melt the Chocolate – While the base is setting, melt the white chocolate until smooth.
- Decorate – Pour the melted white chocolate over the Rice Krispie mixture, spreading evenly. Scatter the remaining mini eggs, some whole and some crushed, over the top.
- Chill & Set – Refrigerate for 1 hour until the chocolate is firm.
- Slice & Serve – Once fully set, lift from the tin and cut into squares. For clean cuts, use a hot knife.
Notes
- For extra crunch, add crushed digestive biscuits or extra chocolate chips.
- Use milk or dark chocolate instead of white for a different flavor twist.
- Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
