  • 2 cups chicken stock or broth (low sodium)
  • 2 cups water
  • 3 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 400 g / 14 oz canned kidney beans, drained
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup small pasta
  • 1/4 cup grated parmesan

Vegetables:

  • 1 celery rib, chopped
  • 1 large carrot, diced
  • 1 zucchini, chopped
  • 1 potato, diced
  • 100 g / 3 oz green beans, trimmed
  • 60 g / 2 oz baby spinach

For Serving:

  • Extra parmesan (to taste)
  • Chopped parsley (optional)
  • Crusty bread (optional)

Instructions

Sauté the Aromatics

  • Heat olive oil in a large pot over high heat.
  • Add finely chopped bacon and cook until golden, about 2 minutes.
  • Stir in garlic and onion, cooking until the onion becomes translucent.

2. Add Core Vegetables

  • Add carrot, celery, and zucchini to the pot. Stir for about 1 minute to coat the vegetables in bacon and garlic flavors.

3. Build the Base

  • Pour in crushed tomatoes, chicken stock, water, tomato paste, Worcestershire sauce, and kidney beans.
  • Season with salt and pepper, stirring to combine all ingredients.

4. Simmer
