Ingredients

Savory Ingredients for a Flavor-Packed Bite:

  • 2 tablespoons extra virgin olive oil
  • 1 large red onion, chopped
  • 2 cloves garlic, chopped
  • 1 red bell pepper, diced (4.93 oz | 140 g)
  • 1 cup mushrooms, sliced (3.38 oz | 96 g)
  • 1 tablespoon taco seasoning
  • 1 (14 oz) can tomato purée
  • 1 (14 oz) can kidney or black beans, drained
  • ½ cup sweet corn (2.89 oz | 82 g)
  • ½ cup chopped cilantro, plus more for garnish (0.28 oz | 8 g)
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 6 corn tortillas
  • 2 cups cheddar cheese (7.05 oz | 200 g)

Instructions

  1. Preheat & Prep – Preheat the oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. Sauté the Veggies – Heat the olive oil in a large skillet over medium heat. Add the onion, garlic, bell pepper, and mushrooms, sautéing for about 3 minutes until softened.
  3. Season & Simmer – Stir in the taco seasoning, tomato purée, beans, corn, cilantro, salt, and pepper. Cook for 2 minutes, adjust seasoning to taste, then remove from heat.
  4. Layer Like a Pro – Cut each corn tortilla into quarters. Place 8 tortilla pieces at the bottom of the baking dish. Spread ⅓ of the bean mixture over them, then sprinkle with ½ cup of cheddar cheese. Repeat this layering two more times, finishing with a final layer of cheese on top.
  5. Bake to Perfection – Bake for 15 minutes, or until the cheese is melted and golden brown.
  6. Rest & Serve – Let the casserole rest for 5 minutes before cutting. Garnish with extra chopped cilantro and serve hot.

  • Protein Boost – Add shredded chicken or ground beef for a heartier version.
  • Dairy-Free? – Use dairy-free cheese or skip the cheese altogether.
