Ingredients
For the “Carrot” Peppers:
- 10–12 mini bell peppers (preferably orange)
- 1 bunch of carrot stems or fresh dill fronds (for the “carrot” leaves)
For the Herb Cream Cheese Filling:
- 4 oz cream cheese, softened
- 3 tablespoons sour cream
- 1 scallion, finely chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- ⅛ teaspoon salt

- Lay the mini bell peppers on a cutting board and observe how they naturally rest.
- Slice each pepper lengthwise parallel to the cutting board so that they lay flat when stuffed.
- Remove any seeds or inner white ribs if desired.

- In a mixing bowl, combine cream cheese, sour cream, scallions, dill, parsley, and salt.
- Stir until smooth and well blended.

- Using a spoon, carefully fill each halved mini pepper with the cream cheese mixture.

- Take small dill fronds or carrot stems and press them gently into the cream cheese filling at the top of each pepper.
