Description

A bold, creamy, and protein-packed dip that brings the heat! This high-protein buffalo dip is perfect for game nights, potlucks, or as a satisfying snack. Made with lean chicken, cottage cheese, and spicy hot sauce, it delivers the ultimate flavor punch while keeping things nutritious.

Ingredients

  • 1 lb cooked boneless, skinless chicken breast (chopped small)
  • 2 cups cottage cheese (blend for a smoother texture if desired)
  • 1 ¼ cups shredded cheddar cheese (divided)
  • ¼ cup Frank’s Red Hot sauce (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 green onion (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine the chopped chicken, cottage cheese, 1 cup of shredded cheddar cheese, hot sauce, and garlic powder. Mix well.
  3. Transfer the mixture to a small casserole dish or any ovenproof dish. Smooth out the top and sprinkle with the remaining ¼ cup of cheddar cheese.
  4. Bake for 15-20 minutes until bubbly.
  5. For a crispy, golden top, broil for the last 1-2 minutes (watch carefully to avoid burning).
  6. Remove from the oven, let cool slightly, and garnish with chopped green onion.
  7. Serve with tortilla chips, pita chips, crackers, or fresh veggie sticks.

Notes

  • Adjust the hot sauce quantity based on your spice preference.
  • Blending the cottage cheese will create a creamier texture.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
