Description

These Fluffy Cottage Cheese Oven Pancakes are a high-protein, low-effort breakfast dream! Light and airy with a subtle sweetness, they bake up golden and delicious in just 15 minutes. Topped with fresh strawberries and your favorite syrup, these pancakes make mornings both easy and delightful!

Ingredients

  • 3 large eggs
  • 1 cup plain cottage cheese (preferably 4% milkfat)
  • 1 teaspoon vanilla essence
  • 2 tablespoons lemon juice
  • 2 tablespoons sugar or honey
  • ½ cup flour (all-purpose, whole wheat, or gluten-free blend)
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ½ cup sliced fresh strawberries

Optional Toppings: Extra sliced strawberries, powdered sugar, maple syrup

Instructions

  1. Preheat & Prep: Preheat oven to 425°F (220°C). Line a 9×13-inch baking sheet with parchment paper and lightly grease it.
  2. Mix the Wet Ingredients: In a mixing bowl, whisk together eggs, cottage cheese, vanilla essence, lemon juice, and sugar (or honey) until smooth.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt.
  4. Blend & Pour: Add dry ingredients to wet mixture, stirring until just combined. Avoid overmixing to keep pancakes fluffy. Pour batter into prepared pan and spread evenly with a spatula. Sprinkle sliced strawberries on top.
  5. Bake to Perfection: Bake for 15 minutes, or until the top is golden brown and slightly puffed.
  6. Serve & Enjoy: Slice into squares and serve with your favorite toppings like powdered sugar, extra berries, or maple syrup.

Notes

  • For a richer flavor, use full-fat cottage cheese.
  • Swap strawberries for blueberries, raspberries, or bananas for variety.
  • Store leftovers in an airtight container in the fridge for up to 3 days; reheat in the oven for best texture.
