Ingredients

  • 2 cups grated zucchini (about 1 medium zucchini)
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes (packed in oil, drained)
  • 3 large eggs
  • 1/2 cup olive oil
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh basil, chopped (optional for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, combine the grated zucchini, all-purpose flour, whole wheat flour, baking powder, baking soda, salt, dried basil, garlic powder, black pepper, and Parmesan cheese. Mix well to combine.
  3. In a separate bowl, whisk together the eggs, olive oil, honey (or maple syrup), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chopped sun-dried tomatoes.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover it loosely with aluminum foil.
  7. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Garnish with fresh basil if desired.
