Ingredients
- 2 cups grated zucchini (about 1 medium zucchini)
- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped sun-dried tomatoes (packed in oil, drained)
- 3 large eggs
- 1/2 cup olive oil
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup fresh basil, chopped (optional for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, combine the grated zucchini, all-purpose flour, whole wheat flour, baking powder, baking soda, salt, dried basil, garlic powder, black pepper, and Parmesan cheese. Mix well to combine.
- In a separate bowl, whisk together the eggs, olive oil, honey (or maple syrup), and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chopped sun-dried tomatoes.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top browns too quickly, cover it loosely with aluminum foil.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Garnish with fresh basil if desired.
Notes
- For added moisture and flavor, consider adding 1/2 cup of shredded carrots or 1/2 cup of chopped walnuts or pecans to the batter.
- To make this recipe gluten-free, substitute the all-purpose flour and whole wheat flour with a gluten-free flour blend. Adjust the baking time as needed.
