A delightful Tropical Fruit Cheesecake Crumb Cake Dessert that combines a crumbly base with a creamy cheesecake layer and topped with fresh tropical fruits.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple, drained
- 1 cup diced mango (fresh or canned)
- 1 cup diced kiwi
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, and salt. Mix well.
- Add the softened butter, egg, and 1 teaspoon of vanilla extract to the dry ingredients. Mix until a crumbly dough forms.
- Reserve 1 cup of the crumb mixture for the topping. Press the remaining mixture into the bottom of the prepared baking dish to form the base.
- In another bowl, beat the softened cream cheese, powdered sugar, lemon juice, and 1/2 teaspoon of vanilla extract until smooth and creamy.
- Spread the cream cheese mixture evenly over the crumb base.
- Top the cream cheese layer with the drained crushed pineapple, diced mango, and diced kiwi.
- Sprinkle the reserved crumb mixture over the top of the fruit layer.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool for at least 30 minutes before slicing and serving.
Notes
- For a tropical twist, consider adding shredded coconut to the crumb topping or incorporating other fruits like papaya or passion fruit.
- For a lighter version, substitute Greek yogurt for the cream cheese.
