Description

A delightful Tropical Fruit Cheesecake Crumb Cake Dessert that combines a crumbly base with a creamy cheesecake layer and topped with fresh tropical fruits.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
  • 1 cup diced mango (fresh or canned)
  • 1 cup diced kiwi
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda, and salt. Mix well.
  3. Add the softened butter, egg, and 1 teaspoon of vanilla extract to the dry ingredients. Mix until a crumbly dough forms.
  4. Reserve 1 cup of the crumb mixture for the topping. Press the remaining mixture into the bottom of the prepared baking dish to form the base.
  5. In another bowl, beat the softened cream cheese, powdered sugar, lemon juice, and 1/2 teaspoon of vanilla extract until smooth and creamy.
  6. Spread the cream cheese mixture evenly over the crumb base.
  7. Top the cream cheese layer with the drained crushed pineapple, diced mango, and diced kiwi.
  8. Sprinkle the reserved crumb mixture over the top of the fruit layer.
  9. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  10. Allow to cool for at least 30 minutes before slicing and serving.

  • For a tropical twist, consider adding shredded coconut to the crumb topping or incorporating other fruits like papaya or passion fruit.
