Description

Delightful and easy recipe for Tropical Pineapple Coconut Bars that brings a taste of the tropics to your dessert table.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, drained
  • 1/2 cup shredded coconut (sweetened or unsweetened)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In a separate large bowl, mix the melted butter, egg, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the crushed pineapple, shredded coconut, and nuts (if using) until evenly distributed.
  6. Pour the batter into the prepared baking dish and spread it out evenly.
  7. Bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the bars to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely before cutting into squares.

Notes

  • For a tropical twist, add a teaspoon of almond extract for extra flavor.
  • Substitute half of the all-purpose flour with whole wheat flour for a healthier option.
