Description

Tuna Melt Cups are a delicious and healthy avocado recipe filled with a creamy tuna mixture and baked to perfection.

Ingredients

  • 1 can (5 oz) tuna, drained
  • 1/4 cup mayonnaise
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 large avocado, halved and pitted
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the drained tuna, mayonnaise, cheddar cheese, celery, red onion, Dijon mustard, garlic powder, salt, and pepper. Mix well until all ingredients are fully incorporated.
  3. Scoop out a little of the flesh from each avocado half to create a small bowl for the tuna mixture.
  4. Drizzle olive oil over the avocado halves and season with a pinch of salt and pepper.
  5. Fill each avocado half with the tuna mixture, packing it in gently.
  6. Place the filled avocado halves on a baking sheet and bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and let cool slightly. Garnish with chopped parsley if desired.

Notes

  • For a spicy kick, add a few dashes of hot sauce or some diced jalapeños to the tuna mixture.
  • Substitute the cheddar cheese with mozzarella or pepper jack for a different flavor profile.
