A delicious and easy Tuna Rice Quiche that combines cooked rice, tuna, and cheese for a satisfying meal.
Ingredients
- 2 cups cooked white rice
- 1 can (12 ounces) tuna in water, drained
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon olive oil
- 1/4 cup chopped green onions (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish with olive oil.
- In a large bowl, combine the cooked rice and half of the shredded cheddar cheese. Press this mixture evenly into the bottom and up the sides of the prepared pie dish to form a crust.
- In another bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
- Stir in the drained tuna and chopped green onions (if using) into the egg mixture.
- Pour the tuna and egg mixture over the rice crust in the pie dish.
- Sprinkle the remaining cheddar cheese on top of the quiche.
- Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is golden brown.
- Allow the quiche to cool for 5-10 minutes before slicing and serving.
Notes
- For a healthier option, substitute half of the cheddar cheese with cottage cheese for added protein and lower fat.
- Add vegetables like spinach, bell peppers, or mushrooms to the tuna mixture for extra flavor and nutrition.
