Description

A rich and creamy Turtle Fudge Cheesecake topped with caramel and pecans, perfect for chocolate lovers.

Ingredients

  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans
  • 1 cup caramel sauce
  • 1 pre-made graham cracker crust (9-inch)
  • Whipped cream, for topping (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  3. Gradually add the granulated sugar and vanilla extract, mixing until well combined.
  4. Add the eggs one at a time, mixing on low speed after each addition until just blended.
  5. Stir in the sour cream until smooth.
  6. Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until fully melted. Allow to cool slightly, then fold into the cheesecake mixture.
  7. Gently fold in the chopped pecans, reserving a few for garnish.
  8. Pour the cheesecake batter into the pre-made graham cracker crust, smoothing the top with a spatula.
  9. Bake in the preheated oven for 55-60 minutes or until the center is set but still slightly jiggly.
  10. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  11. Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
  12. Before serving, drizzle the top with caramel sauce and garnish with reserved pecans and whipped cream if desired.

Notes

  • For a richer chocolate flavor, use dark chocolate chips instead of semi-sweet.
  • Add a layer of chocolate ganache on top of the cheesecake before chilling for an extra decadent touch.
