Description

Ingredients

  • 1 can (15 ounces) butter beans, drained and rinsed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped (oil-packed for extra flavor)
  • 4 cups fresh spinach
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Juice of 1 lemon

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Stir in the sun-dried tomatoes and cook for another 2 minutes.
  3. Add the butter beans, oregano, salt, and black pepper to the skillet. Gently stir to combine and heat through for about 5 minutes.
  4. Add the fresh spinach and cook until wilted, about 2-3 minutes.
  5. Remove from heat and stir in the lemon juice and Parmesan cheese, if using.
  6. Serve warm, garnished with additional Parmesan if desired.
