Ingredients
- 1 can (15 ounces) butter beans, drained and rinsed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped (oil-packed for extra flavor)
- 4 cups fresh spinach
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
- Juice of 1 lemon
Instructions
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the sun-dried tomatoes and cook for another 2 minutes.
- Add the butter beans, oregano, salt, and black pepper to the skillet. Gently stir to combine and heat through for about 5 minutes.
- Add the fresh spinach and cook until wilted, about 2-3 minutes.
- Remove from heat and stir in the lemon juice and Parmesan cheese, if using.
- Serve warm, garnished with additional Parmesan if desired.
Notes
- For a creamier texture, add a splash of heavy cream or coconut milk during the cooking process.
