Instructions

  1. Sauté the Vegetables:
    • Heat olive oil in a large pot over medium heat.

    • Stir in minced garlic and cook for 1 minute until fragrant.
  2. Add Seasonings and Chicken:
    • Stir in dried oregano, thyme, red pepper flakes, salt, and pepper.
    • Place chicken breasts into the pot and pour in the chicken broth, ensuring the chicken is fully submerged.
  3. Simmer the Soup:
    • Bring the soup to a gentle boil, then reduce heat to low and cover.
    • Simmer for 20 minutes, or until the chicken is fully cooked and tender.
  4. Shred the Chicken:
    • Remove chicken breasts from the pot and shred them using two forks.
    • Return the shredded chicken to the pot.
