Ingredients

  • 1 can (15 ounces) butter beans, drained and rinsed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup fresh spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.
  3. Stir in the diced tomatoes (with their juices), oregano, basil, red pepper flakes, salt, and pepper. Bring the mixture to a simmer and cook for 5 minutes.
  4. Add the butter beans and gently stir to combine. Cook for another 5-7 minutes until the beans are heated through.
  5. Stir in the chopped spinach and cook until wilted, about 2 minutes.
  6. Remove from heat and sprinkle with grated Parmesan cheese.
  7. Garnish with fresh basil leaves before serving.
