Ingredients
- 1 can (15 ounces) butter beans, drained and rinsed
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, diced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1 cup fresh spinach, roughly chopped
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves for garnish
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1 minute, stirring frequently to prevent burning.
- Stir in the diced tomatoes (with their juices), oregano, basil, red pepper flakes, salt, and pepper. Bring the mixture to a simmer and cook for 5 minutes.
- Add the butter beans and gently stir to combine. Cook for another 5-7 minutes until the beans are heated through.
- Stir in the chopped spinach and cook until wilted, about 2 minutes.
- Remove from heat and sprinkle with grated Parmesan cheese.
- Garnish with fresh basil leaves before serving.
