Description

This Twix Ice Cream Cake is a frozen dessert dream—creamy vanilla ice cream layered over a buttery shortbread crust, loaded with chopped Twix bars and finished with rich chocolate and gooey caramel drizzles. It’s easy to make, no baking required, and a guaranteed crowd-pleaser for summer parties, birthdays, or any sweet tooth emergency.


Ingredients

  • 16 shortbread cookies (Keebler recommended)

  • ¼ cup salted butter, melted

  • 5 cups vanilla ice cream, softened

  • 3 standard-size Twix candy bars, chopped and divided

  • ½ cup milk chocolate chips

  • ½ cup caramel topping


Instructions

  1. Prepare the Dish
    Lightly grease an 8×8-inch or 9×9-inch baking dish with non-stick spray. Set aside.

  2. Make the Crust
    Place shortbread cookies in a Ziplock bag and crush into fine crumbs using a rolling pin. Transfer to the baking dish, mix with melted butter, and press evenly to form the crust. Freeze for 20 minutes.

  3. Build the Filling
    In a mixing bowl, combine softened vanilla ice cream with half of the chopped Twix bars. Spread the mixture evenly over the chilled crust.

  4. Add Toppings and Freeze
    Sprinkle the remaining Twix pieces on top. Cover and freeze the cake for at least 6 hours or overnight for best texture.

  5. Finish with Drizzle
    Melt chocolate chips in the microwave in 20-second intervals, stirring between bursts until smooth. Drizzle melted chocolate and caramel topping over the frozen cake.

  6. Slice and Serve
    Cut into squares and serve immediately. Keep any leftovers frozen in an airtight container for up to 3 months.

Notes

  • Make sure the ice cream is softened enough to mix easily but not melted.
