A delicious and hearty breakfast dish that combines layers of lasagna noodles, breakfast sausage, eggs, and cheese for a satisfying meal.
Ingredients
- 8 ounces lasagna noodles
- 1 pound breakfast sausage, crumbled
- 1 cup diced bell peppers
- 1 cup diced onions
- 8 large eggs
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, cook the crumbled sausage until browned and fully cooked, about 5-7 minutes. Drain excess fat.
- Add the diced bell peppers and onions to the skillet and sauté until softened, about 3-4 minutes. Remove from heat.
- In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.
- In a greased 9×13 inch baking dish, spread a thin layer of the egg mixture on the bottom.
- Layer 1/3 of the cooked lasagna noodles over the egg mixture.
- Spread half of the sausage and vegetable mixture over the noodles, followed by 1/3 of the cheddar and mozzarella cheeses.
- Pour 1/3 of the remaining egg mixture over the cheese layer.
- Repeat the layering process: noodles, sausage mixture, cheeses, and egg mixture.
- For the final layer, place the last of the noodles on top, pour the remaining egg mixture, and sprinkle with Parmesan cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and set.
- Let the lasagna cool for 10 minutes before slicing. Garnish with chopped parsley if desired.
Notes
- For a vegetarian option, substitute the sausage with sautéed mushrooms and spinach.
- Add your favorite breakfast ingredients like diced tomatoes, spinach, or cooked bacon for extra flavor and nutrition.
