Description

A delicious and hearty breakfast dish that combines layers of lasagna noodles, breakfast sausage, eggs, and cheese for a satisfying meal.


Ingredients

  • 8 ounces lasagna noodles
  • 1 pound breakfast sausage, crumbled
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, cook the crumbled sausage until browned and fully cooked, about 5-7 minutes. Drain excess fat.
  4. Add the diced bell peppers and onions to the skillet and sauté until softened, about 3-4 minutes. Remove from heat.
  5. In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.
  6. In a greased 9×13 inch baking dish, spread a thin layer of the egg mixture on the bottom.
  7. Layer 1/3 of the cooked lasagna noodles over the egg mixture.
  8. Spread half of the sausage and vegetable mixture over the noodles, followed by 1/3 of the cheddar and mozzarella cheeses.
  9. Pour 1/3 of the remaining egg mixture over the cheese layer.
  10. Repeat the layering process: noodles, sausage mixture, cheeses, and egg mixture.
  11. For the final layer, place the last of the noodles on top, pour the remaining egg mixture, and sprinkle with Parmesan cheese.
  12. Cover the baking dish with aluminum foil and bake for 25 minutes.
  13. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and set.
  14. Let the lasagna cool for 10 minutes before slicing. Garnish with chopped parsley if desired.
