Description
A refreshing and crunchy salad packed with vibrant vegetables and a flavorful dressing, perfect for a light meal or side dish.
Ingredients
- 2 cups green cabbage, shredded
- 1 cup red cabbage, shredded
- 1 cup carrots, grated
- 1 cup snap peas, trimmed and halved
- 1 cup bell pepper, thinly sliced (any color)
- 1/2 cup green onions, sliced
- 1/2 cup cilantro, chopped
- 1/4 cup sliced almonds
- 1/4 cup sesame seeds
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 1 tablespoon honey
- 1 teaspoon fresh ginger, grated
- 1 teaspoon garlic, minced
- 1 teaspoon sriracha (optional for heat)
Instructions
- In a large bowl, combine the green cabbage, red cabbage, carrots, snap peas, bell pepper, green onions, cilantro, sliced almonds, and sesame seeds. Toss gently to mix the ingredients evenly.
- In a separate small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, ginger, garlic, and sriracha (if using) until well combined.
- Pour the dressing over the salad mixture and toss until all the vegetables are coated evenly with the dressing.
- For best flavor, let the salad sit for at least 15 minutes before serving to allow the flavors to meld.
- Serve chilled or at room temperature, and enjoy!
Notes
- For added protein, consider adding grilled chicken, tofu, or shrimp.
- Substitute the almonds with cashews or walnuts for a different crunch, or use sunflower seeds for a nut-free option.
