These Decadent Triple Layer Mint Oreo Brownies are a chocolate lover’s dream! With a fudgy brownie base, a minty marshmallow swirl, luscious white chocolate frosting, and a crunchy Mint Oreo topping, these brownies are perfect for any occasion and sure to impress!
Ingredients
Minty Marshmallow Swirl:
- 1 (7-ounce) jar Marshmallow Fluff
- ⅛ teaspoon mint extract (do not exceed)
- 8+ drops green food coloring (adjust for desired shade)
Fudgy Brownie Base:
- 4 ounces baking chocolate (or 9 squares of 72% dark chocolate)
- ¾ cup (1 ½ sticks) unsalted butter, melted
- 2 cups granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 2 tablespoons espresso or brewed coffee (optional)
- 1 cup all-purpose flour
- 12 Cool Mint Oreo Cookies, hand-crumbled
Luscious Frosting & Topping:
- ½ cup butter or margarine, softened
- 3 to 4 cups powdered sugar
- 1 teaspoon vanilla extract
- Splash of milk (if needed for consistency)
- ¾ cup white chocolate chips, melted
- 18 Cool Mint Oreo Cookies, hand-crumbled

Prepare the Pan & Preheat:
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with foil and coat with cooking spray.

Make the Minty Swirl:
- In a bowl, combine Marshmallow Fluff, mint extract, and green food coloring. Stir until evenly mixed and set aside.

Prepare the Brownie Batter:
- In a large microwave-safe bowl, melt chocolate and butter together (about 90 seconds), stirring until smooth.
- Mix in sugar (it will look grainy—that’s okay).
- Add eggs and vanilla, stirring well. If using coffee, add it now.
- Gently mix in flour until just combined—don’t overmix!
- Fold in 12 crumbled Mint Oreos.

Bake the Brownies:
- Pour the brownie batter into the prepared pan.
- Drop ½ cup of the green marshmallow mixture onto the batter in spoonfuls, then swirl with a knife for a marbled effect.
- Bake for 23-25 minutes, until set. Do not overbake!
- Let the brownies cool completely (about 1 hour). If in a hurry, pop them in the freezer for 10 minutes.

Make the Frosting & Topping:
- Frosting: Whisk together butter, powdered sugar, vanilla, and a splash of milk until smooth and fluffy. (Or use store-bought frosting for convenience.)
- Melt white chocolate chips in a microwave (heat in 30-second intervals, stirring in between).
- Mix melted white chocolate into the remaining marshmallow mixture along with more green food coloring until the color is vibrant.
- Spread this frosting layer evenly over the cooled brownies.

Add the Oreo Topping:
- Sprinkle the top with 18 hand-crumbled Mint Oreos, pressing them gently into the frosting.
- Let the brownies set fully before slicing and serving.
Notes
- Make sure not to overbake the brownies to keep the texture fudgy.
- The coffee in the brownie batter enhances the chocolate flavor, but it’s optional.
- Allow the brownies to set fully in the fridge before cutting to get clean slices.
