A delicious and moist carrot apple zucchini bread that combines the flavors of fresh vegetables and fruits for a delightful treat.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 3 large eggs
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup grated zucchini (about 1 medium zucchini)
- 1 cup grated carrots (about 2 medium carrots)
- 1 cup peeled and grated apple (about 1 medium apple)
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins or dried cranberries (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until well blended.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- Fold in the grated zucchini, carrots, apple, and nuts or dried fruit if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, tent it with aluminum foil.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
- For added moisture, consider substituting 1/2 cup of the oil with unsweetened applesauce.
- Experiment with spices by adding a pinch of ginger or allspice for a different flavor profile.
