Ingredients

  • 1 cup grated carrots (about 2 medium carrots)
  • 1 cup peeled and grated apple (about 1 medium apple)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins or dried cranberries (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until well blended.
