A delightful twist on traditional pie, this Upside-Down Apple Pecan Pie features a caramelized pecan topping and a moist apple cake base.
Ingredients
- 3 cups thinly sliced apples (about 3 medium apples)
- 1 tablespoon lemon juice
- 1 cup pecans, chopped
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with non-stick spray or butter.
- In a large bowl, toss the sliced apples with lemon juice and set aside.
- In another bowl, mix the chopped pecans, melted butter, brown sugar, cinnamon, and salt until well combined. Spread this mixture evenly on the bottom of the prepared cake pan.
- Layer the sliced apples over the pecan mixture in the pan, arranging them evenly.
- In a separate bowl, whisk together the flour, baking powder, and granulated sugar.
- In another bowl, beat the eggs and then add the vanilla extract. Combine the wet ingredients with the dry ingredients and stir until just mixed.
- Pour the batter over the apples and pecans in the pan, spreading it evenly.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the pie to cool in the pan for 10 minutes, then invert it onto a serving plate. Let it cool slightly before serving.
Notes
- For added flavor, consider adding a teaspoon of nutmeg or allspice to the batter.
