Description

A delightful twist on traditional pie, this Upside-Down Apple Pecan Pie features a caramelized pecan topping and a moist apple cake base.

Ingredients

  • 3 cups thinly sliced apples (about 3 medium apples)
  • 1 tablespoon lemon juice
  • 1 cup pecans, chopped
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with non-stick spray or butter.
  2. In a large bowl, toss the sliced apples with lemon juice and set aside.
  3. In another bowl, mix the chopped pecans, melted butter, brown sugar, cinnamon, and salt until well combined. Spread this mixture evenly on the bottom of the prepared cake pan.
  4. Layer the sliced apples over the pecan mixture in the pan, arranging them evenly.
  5. In a separate bowl, whisk together the flour, baking powder, and granulated sugar.
  6. In another bowl, beat the eggs and then add the vanilla extract. Combine the wet ingredients with the dry ingredients and stir until just mixed.
  7. Pour the batter over the apples and pecans in the pan, spreading it evenly.
  8. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the pie to cool in the pan for 10 minutes, then invert it onto a serving plate. Let it cool slightly before serving.

Notes

  • For added flavor, consider adding a teaspoon of nutmeg or allspice to the batter.
  • Serve warm with a scoop of vanilla ice cream or whipped cream for a delicious dessert.
