Ingredients

  • 2 medium heads of cauliflower, cut into florets

  • 1 tablespoon lemon zest
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the olive oil, lemon juice, maple syrup, lemon zest, black pepper, garlic powder, onion powder, and salt until well combined.
  3. Add the cauliflower florets to the bowl and toss until they are evenly coated with the lemon pepper glaze.
  4. Spread the cauliflower in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through for even cooking.
