A delicious and healthy vegan dish featuring roasted cauliflower coated in a zesty lemon pepper glaze.
Ingredients
- 2 medium heads of cauliflower, cut into florets
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 tablespoons maple syrup
- 1 tablespoon lemon zest
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the olive oil, lemon juice, maple syrup, lemon zest, black pepper, garlic powder, onion powder, and salt until well combined.
- Add the cauliflower florets to the bowl and toss until they are evenly coated with the lemon pepper glaze.
- Spread the cauliflower in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, stirring halfway through for even cooking.
- Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
Notes
- For extra crunch, try adding a tablespoon of nutritional yeast to the glaze for a cheesy flavor.
- You can substitute the maple syrup with agave nectar or coconut sugar for a different sweetness profile.
