Description

Crispy, golden, and filled with sweet fruity goodness, these Vegan Love Letter Pastries are the perfect way to show someone you care. With flaky vegan puff pastry and a delightful jam filling, these pastries are easy to make, 100% plant-based, and absolutely delicious. Whether it’s Valentine’s Day, an anniversary, or a sweet weekend treat, these pastries are a heartfelt way to share a little love.

Ingredients

  • 1 sheet vegan puff pastry (thawed)
  • ¼ cup fruit jam or preserves (strawberry, raspberry, or cherry)
  • 2 tablespoons powdered sugar (for dusting)
  • 2 tablespoons non-dairy milk (for brushing)
  • 1 tablespoon maple syrup or agave nectar
  • Fresh berries (optional, for garnish)

Optional Fillings & Additions

  • Vegan chocolate chips – For a rich, chocolatey surprise.
  • Peanut butter or almond butter – Adds a creamy texture.
  • Cinnamon & sugar – For a warm, spiced flavor.
  • Chopped nuts – Adds a crunchy element.

Instructions

1️⃣ Preheat the Oven

  • Set your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.

2️⃣ Roll Out the Puff Pastry

  • On a lightly floured surface, roll out the vegan puff pastry slightly to thin it out.
  • Cut the pastry into 4-inch squares using a sharp knife or pizza cutter.

3️⃣ Add the Filling

  • Spoon 1 teaspoon of jam (or your favorite filling) into the center of each square.

4️⃣ Fold the Pastry into a Love Letter Shape

  • Fold three corners toward the center, leaving one flap open (to resemble an envelope).
  • Lightly press the edges to seal the pastry.

5️⃣ Brush with Non-Dairy Milk

  • Using a pastry brush, lightly coat the tops with non-dairy milk to get a golden finish.

6️⃣ Bake the Pastries

  • Place the pastries on the prepared baking sheet.
  • Bake for 15-18 minutes until golden brown and puffed up.

7️⃣ Let Cool & Garnish

  • Let pastries cool for 5 minutes before dusting with powdered sugar.
  • Garnish with fresh berries for an extra touch of elegance.

Notes

✔️ Keep the Puff Pastry Cold – Warm dough won’t puff up properly.
✔️ Don’t Overfill – Too much jam can cause leaks.
✔️ Use a Hot Oven – Ensures a crispy, golden texture.
✔️ Seal the Edges Well – Helps keep the filling inside.
