Ingredients
- 1 sheet vegan puff pastry (thawed)
- ¼ cup fruit jam or preserves (strawberry, raspberry, or cherry)
- 2 tablespoons powdered sugar (for dusting)
- 2 tablespoons non-dairy milk (for brushing)
- 1 tablespoon maple syrup or agave nectar
- Fresh berries (optional, for garnish)
Optional Fillings & Additions
- Vegan chocolate chips – For a rich, chocolatey surprise.
- Peanut butter or almond butter – Adds a creamy texture.
- Cinnamon & sugar – For a warm, spiced flavor.
- Chopped nuts – Adds a crunchy element.
Instructions
Preheat the Oven
- Set your oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
Roll Out the Puff Pastry
- On a lightly floured surface, roll out the vegan puff pastry slightly to thin it out.
- Cut the pastry into 4-inch squares using a sharp knife or pizza cutter.
Add the Filling
- Spoon 1 teaspoon of jam (or your favorite filling) into the center of each square.
Fold the Pastry into a Love Letter Shape
- Fold three corners toward the center, leaving one flap open (to resemble an envelope).
- Lightly press the edges to seal the pastry.
Brush with Non-Dairy Milk
- Using a pastry brush, lightly coat the tops with non-dairy milk to get a golden finish.
Bake the Pastries
- Place the pastries on the prepared baking sheet.
- Bake for 15-18 minutes until golden brown and puffed up.
Let Cool & Garnish
- Let pastries cool for 5 minutes before dusting with powdered sugar.
- Garnish with fresh berries for an extra touch of elegance.
Notes
Keep the Puff Pastry Cold – Warm dough won’t puff up properly.
Don’t Overfill – Too much jam can cause leaks.
Use a Hot Oven – Ensures a crispy, golden texture.
Seal the Edges Well – Helps keep the filling inside.
