A delicious and nutritious Vegetable Frittata recipe that is perfect for breakfast or brunch.
Ingredients
- 4 medium potatoes, peeled and diced
- 1 small onion, chopped
- 1 red bell pepper, diced
- 1 cup fresh spinach, chopped
- 8 large eggs
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften.
- Add the chopped onion and red bell pepper to the skillet. Cook for an additional 5 minutes, until the vegetables are tender.
- Stir in the chopped spinach and cook for another 2 minutes until wilted.
- In a large bowl, whisk together the eggs, milk, garlic powder, salt, and black pepper.
- Pour the egg mixture over the cooked vegetables in the skillet. If using, sprinkle the shredded cheddar cheese on top.
- Cook on the stovetop for 2-3 minutes until the edges start to set, then transfer the skillet to the preheated oven.
- Bake for 20-25 minutes, or until the frittata is set in the center and lightly golden on top.
- Let cool for a few minutes before slicing into wedges and serving.
Notes
- For a spicier version, add diced jalapeños or a pinch of red pepper flakes to the vegetable mixture.
- You can also substitute the potatoes with sweet potatoes for a different flavor and added nutrients.
