Ingredients

  • 2 cups rolled oats
  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup grated carrots (about 2 medium carrots)
  • 1/2 cup chopped bell pepper (any color)
  • 1/2 cup finely chopped onion
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup almond flour
  • 2 large eggs
  • 1/4 cup milk (dairy or non-dairy)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil (for greasing the pan)

Instructions

  1. Preheat your oven to 350°F. Grease a 9×9-inch baking pan with olive oil.
  2. In a large mixing bowl, combine the rolled oats, grated zucchini, grated carrots, chopped bell pepper, chopped onion, shredded cheese, and almond flour. Mix well.
  3. In a separate bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, black pepper, and paprika until fully combined.
  4. Pour the egg mixture into the bowl with the vegetable mixture and stir until everything is evenly coated.
  5. Transfer the mixture to the prepared baking pan, spreading it out evenly. Press down gently to compact it.
  6. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool in the pan for about 10 minutes before slicing into squares. Serve warm or at room temperature.
