Description
A delicious and energizing Veggie Breakfast Burrito packed with black beans, bell peppers, spinach, and scrambled eggs.
Ingredients
- 2 large flour tortillas
- 1 cup black beans, drained and rinsed
- 1 cup bell peppers, diced (any color)
- 1 cup spinach, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 large eggs
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 avocado, sliced
- Salsa, for serving
Instructions
- In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion and bell peppers, and sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the chopped spinach, black beans, cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes until the spinach is wilted and everything is heated through. Remove from heat and set aside.
- In a separate bowl, whisk the eggs with a pinch of salt and pepper. In the same skillet, scramble the eggs over medium heat until just set.
- To assemble the burritos, lay a tortilla flat and spoon some of the veggie mixture in the center, followed by a portion of scrambled eggs and a sprinkle of cheddar cheese.
- Fold in the sides of the tortilla and roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.
- If desired, place the burritos seam-side down in the skillet and cook for 1-2 minutes on each side until golden and crispy.
- Serve warm with sliced avocado and salsa on the side.
Notes
- For a spicier kick, add diced jalapeños to the veggie mixture or use pepper jack cheese instead of cheddar.
- You can substitute the black beans with refried beans or add cooked sausage or bacon for extra protein.
