Description
A refreshing and sweet syrup made from fresh watermelon, perfect for summer treats.
Ingredients
- 3 cups watermelon, cubed and seeded
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Instructions
- In a blender, puree the watermelon cubes until smooth. Strain the puree through a fine mesh sieve into a bowl, discarding the pulp. You should have about 2 cups of watermelon juice.
- In a medium saucepan, combine the watermelon juice, sugar, lemon juice, and vanilla extract. Stir well to combine.
- Heat the mixture over medium heat, stirring occasionally, until the sugar has completely dissolved.
- Bring the mixture to a gentle simmer and let it cook for about 10-15 minutes, or until it thickens slightly.
- Remove the saucepan from heat and let the syrup cool to room temperature.
- Once cooled, transfer the syrup to a clean glass jar or bottle and refrigerate. The syrup can be stored in the refrigerator for up to 2 weeks.
Notes
- For a refreshing twist, try adding a few fresh mint leaves during the simmering process for a minty flavor.
- This syrup can be used as a topping for pancakes, waffles, or yogurt for a delicious breakfast treat.
