Description

Ingredients

  • 3 cups watermelon, cubed and seeded
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. In a blender, puree the watermelon cubes until smooth. Strain the puree through a fine mesh sieve into a bowl, discarding the pulp. You should have about 2 cups of watermelon juice.
  2. In a medium saucepan, combine the watermelon juice, sugar, lemon juice, and vanilla extract. Stir well to combine.
  3. Heat the mixture over medium heat, stirring occasionally, until the sugar has completely dissolved.
  4. Bring the mixture to a gentle simmer and let it cook for about 10-15 minutes, or until it thickens slightly.
  5. Remove the saucepan from heat and let the syrup cool to room temperature.
  6. Once cooled, transfer the syrup to a clean glass jar or bottle and refrigerate. The syrup can be stored in the refrigerator for up to 2 weeks.
