Description

A comforting and hearty White Bean and Bacon Soup that combines the rich flavors of bacon with nutritious white beans and vegetables.


Ingredients

  • 4 slices of bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • Salt and pepper to taste
  • 2 cups kale or spinach, chopped (optional)
  • 1 tablespoon olive oil (optional)

Instructions

  1. In a large pot over medium heat, cook the chopped bacon until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
  2. Add the diced onion to the pot and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute.
  3. Pour in the chicken broth and bring to a simmer. Add the white beans, thyme, rosemary, bay leaf, carrots, and celery. Season with salt and pepper.
  4. Let the soup simmer for 20-25 minutes, until the vegetables are tender.
  5. If using, stir in the chopped kale or spinach and cook for another 5 minutes until wilted.
  6. Return the crispy bacon to the pot and stir to combine. Remove the bay leaf before serving.

Notes

  • For a creamier soup, blend a portion of the soup with an immersion blender and then mix it back in.
  • Add a splash of lemon juice or vinegar before serving for a bright flavor boost.
